Fritz Doss attended The Culinary Institute of America in Hyde Park, New York, and Florida International
University, School of Hospitality Management, in Miami, Florida. He graduated with degrees from both
schools and began his hotel career in Miami, where he developed his culinary skills, and would travel the
country for 25 years working in hotel kitchens in Dallas, Texas; Newport Beach, California; Atlanta,
Georgia; and Orlando, Florida.

Earlier in his career, Fritz gained extensive experience in family owned restaurants with all menu items
made from scratch. Fritz is known for his tremendous commitment to an innovative and fresh approach to
food, dishes of simplicity and elegance, using fresh local ingredients and styles, and attention to detail in
all aspects of the hotel’s dining choices, for restaurants, banquets, meetings and special occasions.

During his culinary career, Chef Doss has catered several PGA Tour events, hosted three Worldwide
Wide sponsors for the 1996 Olympic Games, hosted the NFL for Super Bowl 23, and catered an NBA All
Star Game Commissioner’s after game reception. He has participated in various major fundraisers
including Wolfgang Puck’s Meals on Wheels at Universal Studios in Los Angeles, The Liver Foundation,
and American Cancer Society. Chef Doss has had the opportunity to cook for celebrities such as Arnold
Schwarzenegger, Ted Turner, Walter Cronkite, Quincy Jones, Hillary Clinton, Angela Basset, Gloria
Estefan, Julian Lennon, and has cooked for every sitting U.S. President since President Ronald Regan.
Chef Doss was recognized by Hyatt Hotels Corporation as the 2007 Executive Chef of the year.

Chef Doss has lifetime certification from The Education Foundation of The National Restaurant
Association as a Foodservice Management Professional®, and was awarded Certified Executive Chef by
The American Culinary Federation, which he held for over 10 years.

Chef Doss has guest lectured on food safety, has participated in food safety studies with the Center for
Disease Control in Atlanta, Georgia, and has been featured on CBS, FOX, American Airlines in-flight TV,
Peachtree TV, and has been quoted is several publications including the New York Times. He also was
very successful implementing a food composting program, and utilizing environmentally friendly products
in the operation, and has been featured on CNN for earning a “ZERO WASTE” rating from The Green
Foodservice Alliance.
