Chef Marcos Segovia

Marcos Segovia has been with The Adolphus for more than 20 years. He began his remarkable journey from war-torn El Salvador to The French Room in the early 1980s. On reaching Dallas, he applied for a job in The Adolphus’s stewarding department. He was immediately hired as a dishwasher. Soon after, Chef Segovia set his sights on the hotel’s celebrated dining room and worked relentlessly to realize this goal through a series of hourly positions. In 1992, he joined The French Room kitchen as entre métier. Within a year he was named a line cook and, then, lead cook. In 1994 he earned the title of sous chef of The French Room. He was named chef de cuisine of the dining room in 2000.

Chef Segovia’s outstanding work in The French Room – his concepts, his execution, and his presentations – have helped earn the restaurant three consecutive “America’s Top Table” awards from Gourmet magazine, superior food ratings in the annual Zagat Surveys, and recognition in publications from Bon Appetit to the New York Times. The French Room is now the only AAA Five Diamond restaurant in Texas.

Chef Segovia began his culinary journey under the tutelage of Jean Banchet, when Chef Banchet was The French Room’s consulting chef in the 1980s and early 1990s. His education continued under Chef Banchet’s protégé Philippe Mouton. He trained under a Who’s Who of America’s top culinary talent, who oversaw the dining room, including Kevin Garvin (now a vice president with Neiman Marcus), Daniel Porubiansky (an acolyte of Bruno Menard and Guenter Seeger – and now with the Ritz-Carlton Buckhead in Atlanta), Brent Wuest, Richard Hebben, William Koval and most recently Jason Weaver (now executive chef at the Mandarin Oriental in Las Vegas). Chef Weaver said of Chef Segovia, “I wouldn’t trade him for anyone in the industry. In the years I’ve worked at the top hotels in America, I never met anyone who could equal him. He is that talented.”
